DIY gift: homemade chai masala jar
A jar of chai masala you blended yourself is one of the nicest additions to any hamper. This makes about 1/2 cup, enough for two small gift jars.
- 2 tablespoons green cardamom pods
- 1 tablespoon whole cloves
- 1 tablespoon whole black peppercorns
- 2 sticks cinnamon (about 5 cm each), broken
- 2 tablespoons dry ginger powder (saunth)
- 1/4 of a whole nutmeg, grated (optional)
- Warm a dry pan on low heat. Add the cardamom, cloves, peppercorns and cinnamon and roast for 2 to 3 minutes, stirring, just until fragrant. Do not let them brown.
- Tip the spices onto a plate and let them cool completely.
- Grind to a fine powder in a dry mixer jar, then sift and grind any coarse bits again.
- Stir in the dry ginger powder and nutmeg.
- Spoon into clean, completely dry glass jars and seal tightly.
- Add a label with the date and a note: a pinch per cup, added to the boiling tea.
Homemade masala is best used within a couple of months, so tell the recipient to enjoy it through the winter.
